Duck stuffed with cranberries
In Kashubia it is served mostly on Sundays, holidays and weddings.
Below are shown the necessary ingredients and method of preparation.
Ingredients:
1 whole duck, dried apples (may be fresh) rennet, plums in vinegar, 2 tablespoons of cranberry, marjoram, salt, tablespoon of flour.
Preparation:
To a purified, dried salted duck put apples and plums in vinegar, clip close so the fruit won't fall out during turning. Sprinkle with marjoram. Put into a hot pan. Bake for about 1.5 hours. Pour a little water. When done place the roasted duck in its entirety on a platter.
For the duck broth - add cranberry sauce and thickened with flour.
